Soufflé Ingredients

  • 113 g butter for greasing the ramekins
  • 170 g dark chocolate (chopped) use high-quality chocolate for best flavor
  • 2 whole eggs
  • 2 yolks egg yolks
  • 50 g granulated sugar
  • 1/8 teaspoon salt
  • 2 tablespoons flour

Preparation

  • Preheat the oven to 230°C (450°F). Grease small soufflé cups (ramekins) with butter and lightly dust with cocoa powder.
  • Melt the butter and dark chocolate together in a bowl using a double boiler or microwave in short bursts, stirring frequently.
  • In a separate bowl, whisk the eggs, egg yolks, and sugar until fluffy.
  • Pour the melted chocolate mixture into the egg mixture and stir well.
  • Sift in the salt and flour, and gently fold everything together with a spatula.
  • Divide the mixture among the prepared ramekins.
  • Bake for 8-10 minutes. The edges should look cooked while the center remains soft and gooey.
  • Let them cool for 1 minute before serving, either in the dish or carefully inverted onto a plate.

Notes

Serve with vanilla ice cream or whipped cream. Dust with powdered sugar or drizzle with chocolate sauce for presentation. For leftovers, refrigerate and reheat in the oven.
