Ingredients
  

For the Cocoa Sponge

  • 2 cups all-purpose flour
  • 2 cups granulated sugar
  • 3/4 cup unsweetened cocoa powder bloomed in boiling water
  • 1 cup vegetable oil for moisture
  • 1 cup buttermilk to pair with baking soda
  • 4 large eggs
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1 teaspoon vanilla extract

For the Chocolate Ganache Filling

  • 12 ounces semisweet chocolate chopped
  • 6 ounces heavy cream
  • 1 tablespoon unsalted butter for glossiness

For Assembling and Finishing

  • 1 cup chocolate flakes for decoration

Preparation of Cocoa Sponge

  • Preheat the oven to 350°F (175°C) and prepare three 9-inch round cake pans.
  • In a bowl, mix boiling water with cocoa powder to bloom it, then set aside.
  • In a large mixing bowl, combine flour, sugar, baking soda, and salt.
  • Add the bloomed cocoa mixture, followed by vegetable oil, buttermilk, eggs, and vanilla extract. Mix until smooth.
  • Divide the batter evenly among the prepared cake pans and bake for 30-35 minutes or until a toothpick comes out clean.

Preparation of Chocolate Ganache Filling

  • In a saucepan, heat the heavy cream until it begins to simmer.
  • Pour the hot cream over the chopped chocolate and let it sit for a few minutes without stirring.
  • After a few minutes, stir until smooth and finish with the unsalted butter to achieve a glossy consistency.

Assembling the Cake

  • Once the cakes are completely cool, level the tops with a serrated knife.
  • Place the first layer on a serving plate and spread a layer of ganache on top.
  • Add the second layer of cake and repeat the process, then top with the third layer.
  • Apply a thin crumb coat of ganache to the sides and top of the cake, then refrigerate for 30 minutes.
  • After chilling, apply a final layer of ganache smoothly around the cake, then decorate with chocolate flakes.

Notes

Store the cake in the refrigerator due to the ganache. Serve at room temperature to enhance flavor.
