Ingredients
  

Churro Coating:

Dough:

  • ½ cup granulated sugar
  • ½ cup butter softened
  • 2 eggs
  • ½ cup milk or almond/oat milk
  • 1 teaspoon vanilla extract

Cheesecake Filling:

  • 8 oz cream cheese softened
  • ½ cup powdered sugar
  • 1 teaspoon vanilla extract

Instructions
 

Prepare the Churro Coating:

  • In a small bowl, mix the sugar and cinnamon together.
  • Melt butter and set aside.

Make the Dough:

  • In a bowl, whisk together flour, baking powder, and salt.
  • In another bowl, beat butter and sugar until light and fluffy.
  • Add eggs, milk, and vanilla extract, mixing well.
  • Gradually add dry ingredients and mix until a soft dough forms.

Prepare the Cheesecake Filling:

  • In a bowl, beat cream cheese, powdered sugar, and vanilla extract until smooth.
  • Transfer the filling into a piping bag or plastic bag with a small tip cut off.

Assemble the Cookies:

  • Preheat oven to 350°F (175°C).
  • Take a piece of dough, flatten it, and add a teaspoon of cheesecake filling in the center.
  • Cover with another piece of dough, sealing the edges carefully.
  • Place on a parchment-lined baking sheet.

Bake and Coat:

  • Bake for 12-15 minutes until golden brown.
  • While warm, brush with melted butter and roll in cinnamon sugar until fully coated.
