  • 1 large egg At room temperature
  • ½ cup unsalted butter, melted
  • ¼ cup honey
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • 1 cup light brown sugar, packed For sweetness
  • ½ teaspoon salt
  • 1 teaspoon ground cinnamon, divided For blending into batter and topping
  • 3 tablespoons granulated sugar For topping

Preparation

  • Preheat oven to 350°F (175°C). Grease or line an 8×8-inch baking pan with parchment.
  • In a bowl, whisk melted butter and brown sugar together.
  • Add the egg, honey, and vanilla extract. Whisk until everything is well combined.
  • Stir in the flour, salt, and ½ teaspoon of ground cinnamon until just combined.
  • Pour the batter into the prepared pan.
  • Mix the granulated sugar with the remaining ½ teaspoon of cinnamon and sprinkle it over the batter.

Baking

  • Bake for 22–25 minutes, or until a toothpick inserted in the center comes out clean.
  • Allow to cool completely before cutting into squares.

Notes

For serving, these blondies are delicious on their own or topped with vanilla ice cream or caramel sauce. Store in an airtight container at room temperature for up to a week.
