  • 1 large egg
  • ½ cup unsalted butter, melted Allow to cool slightly before mixing.
  • ¼ cup honey
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour Can be substituted with gluten-free flour blend.
  • 1 cup light brown sugar, packed
  • ½ teaspoon salt
  • 1 teaspoon ground cinnamon, divided
  • 3 tablespoons granulated sugar (for topping)

Preparation

  • Preheat your oven to 350°F (175°C). Grease or line an 8×8-inch baking pan with parchment paper.
  • In a bowl, whisk together the melted butter and brown sugar until smooth.
  • Add the egg, honey, and vanilla to the mixture, whisking until well combined.
  • Stir in the flour, salt, and ½ teaspoon of ground cinnamon until just mixed.
  • Pour the batter into the prepared pan.
  • In a small bowl, mix the granulated sugar with the remaining ½ teaspoon of cinnamon and sprinkle it over the batter.
  • Bake for 22–25 minutes. Check for doneness by inserting a toothpick into the center; it should come out clean.
  • Let the blondies cool completely before cutting them into squares.

Notes

Store cooled blondies in an airtight container at room temperature for up to 3-5 days. For longer storage, freeze tightly wrapped in plastic wrap and place in a freezer bag. Serve with a scoop of vanilla ice cream or a dollop of whipped cream for extra treat.
