Ingredients
  

For the Blondies

  • 1 cup unsalted butter, melted
  • 1 cup brown sugar
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 tablespoon ground cinnamon

For the Topping

  • 1/4 cup granulated sugar for topping
  • 1 tablespoon ground cinnamon for topping

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C) and grease a 9x13 inch baking dish.
  • In a large bowl, mix together the melted butter, brown sugar, and granulated sugar until smooth.
  • Add the eggs one at a time, mixing well after each addition, then stir in the vanilla extract.
  • In a separate bowl, whisk together the flour, baking powder, salt, and ground cinnamon.
  • Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  • Pour the batter into the prepared baking dish and smooth the top.
  • In a small bowl, mix together the 1/4 cup sugar and 1 tablespoon cinnamon, then sprinkle over the top of the batter.

Baking

  • Bake for 25-30 minutes or until a toothpick inserted in the center comes out clean.
  • Let cool before cutting into bars and serving.

Notes

Store cooled blondies in an airtight container at room temperature for up to 3 days. For longer storage, wrap tightly and freeze for up to 2 months. Thaw at room temperature or warm briefly in the oven.
