Ingredients
  

For the cake

  • 2.5 cups all-purpose flour
  • 2 cups granulated sugar
  • 1 tbsp baking powder
  • 0.5 tsp salt
  • 0.75 cups unsalted butter, softened
  • 4 large eggs
  • 1 cup whole milk
  • 1 tbsp vanilla extract

For the frosting

  • 2 cups heavy whipping cream
  • 0.5 cups powdered sugar
  • 8 oz cream cheese, softened
  • 1 tsp vanilla extract

For the drip

  • 0.5 cups white chocolate chips
  • 0.25 cups heavy cream
  • 2 tbsp orange marmalade

For garnishing

  • to taste Fresh strawberries
  • to taste Fresh cherries
  • to taste Mandarin orange slices
  • to taste Blueberries
  • to taste Fresh mint leaves
  • for decoration Gold sanding sugar or cake crumbs for the base

Instructions
 

Preparation

  • Preheat oven to 350°F. Grease and line two 8-inch cake pans with parchment paper.
  • In a large bowl, whisk together flour, sugar, baking powder, and salt.
  • Add softened butter, eggs, milk, and vanilla extract. Beat until smooth and fluffy.
  • Divide the batter evenly between the prepared pans and bake for 28–32 minutes, or until a toothpick inserted in the center comes out clean.
  • Let the cakes cool completely before frosting.

Frosting and Drip

  • For the cream frosting, beat the cream cheese until smooth.
  • Add powdered sugar and vanilla, then slowly fold in the whipped heavy cream until light and fluffy.
  • Frost between the cake layers and around the outside of the cake with a smooth, creamy finish.
  • Chill the cake for 20 minutes before adding the drip.
  • Heat the heavy cream until steaming and pour it over the white chocolate chips. Stir until smooth.
  • Mix in the orange marmalade for a glossy citrus-flavored drip.
  • Spoon the citrus drip around the edges of the cake, allowing beautiful golden drips to fall naturally down the sides.

Decoration

  • Pipe whipped frosting swirls around the top edge and decorate generously with strawberries, cherries, mandarin oranges, blueberries, and fresh mint leaves.
  • Press cake crumbs or gold sanding sugar around the bottom edge for an elegant bakery-style finish.
  • Chill briefly before slicing for clean, creamy layers.

Notes

Use fresh fruit for the best flavor and presentation. Make sure the cakes are completely cool before frosting to avoid melting the cream cheese. For an extra citrus kick, consider adding lemon or lime zest to the frosting.
