Ingredients
  

For the Beef Stew:

  • 1 lb beef stew meat cubed
  • 2 tablespoons olive oil
  • 1 onion diced
  • 3 carrots peeled and chopped
  • 3 celery stalks chopped
  • 3 garlic cloves minced
  • 2 potatoes cubed
  • 1 cup mushrooms sliced
  • 1 cup red wine optional
  • 4 cups beef broth
  • 2 tablespoons tomato paste
  • 1 teaspoon thyme
  • 1 bay leaf
  • Salt and pepper to taste

For the Garlic Mashed Potatoes:

  • 4 large russet potatoes peeled and cut into chunks
  • 4 cloves garlic peeled
  • 4 tablespoons butter
  • ½ cup milk or cream
  • Salt and pepper to taste

For the Beef Stew:

    Brown the beef:

    • Heat 2 tablespoons of olive oil in a large pot over medium heat. Add the cubed beef and brown on all sides. Remove the beef and set it aside.

    Sauté vegetables:

    • In the same pot, add the diced onion, carrots, celery, and garlic. Cook for 5 minutes until the vegetables start to soften.

    Add liquids:

    • Stir in the tomato paste and cook for 1-2 minutes. Pour in the red wine (optional) and let it simmer for 5 minutes until slightly reduced. Add the beef broth and return the browned beef to the pot.

    Add seasonings:

    • Add the thyme, bay leaf, salt, and pepper. Bring the stew to a boil, then reduce the heat to low. Cover and let it simmer for 1 hour, stirring occasionally.

    Add mushrooms and potatoes:

    • After 1 hour, add the cubed potatoes and sliced mushrooms to the pot. Continue simmering for another 30 minutes or until the potatoes are tender and the beef is fully cooked.

    For the Garlic Mashed Potatoes:

      Boil potatoes and garlic:

      • Place the peeled and chopped potatoes along with the whole garlic cloves in a large pot of salted water. Bring to a boil and cook for 15-20 minutes until the potatoes are tender.

      Mash and mix:

      • Drain the potatoes and garlic. Add butter and milk (or cream), then mash until smooth and creamy. Season with salt and pepper to taste.
