  • 4 fillets Cod fillets Fresh cod fillets
  • 1 teaspoon Salt For seasoning
  • 1 teaspoon Pepper For seasoning
  • 2 tablespoons Olive oil For cooking
  • 2 tablespoons Butter Unsalted butter
  • 2 tablespoons Fresh lemon juice Adjust to taste
  • 2 cloves Garlic Minced
  • 1 cup Cherry tomatoes Halved
  • 1/4 cup Fresh parsley Chopped, for garnish

Preparation

  • Season the cod fillets with salt and pepper.
  • In a skillet, heat olive oil over medium heat and add the cod. Cook until golden and cooked through, about 4-5 minutes on each side. Remove and set aside.

Cooking

  • In the same skillet, melt butter and add minced garlic. Sauté until fragrant.
  • Add cherry tomatoes and cook until they soften.
  • Stir in lemon juice and season with salt and pepper.
  • Return the cod to the skillet, spoon the sauce over the top, and garnish with parsley before serving.

Notes

Make sure to season the cod well for better flavor. Use fresh ingredients whenever possible for the best taste. Don’t overcook the fish; it should be flaky but moist. Feel free to adjust the amount of lemon juice to suit your taste preference.
