Ingredients
  

Crust

  • 1 1/2 cups graham cracker crumbs Use finely crushed for a better crust.
  • 1/2 cup unsalted butter, melted Ensure it is well-melted.

Filling

  • 1 cup brown sugar Packed tightly.
  • 1/2 cup granulated sugar
  • 1 cup all-purpose flour Can substitute gluten-free blend.
  • 1 cup instant coffee granules Adjust to taste for stronger or milder coffee flavor.
  • 2 eggs Large eggs preferred.
  • 1 tsp vanilla extract
  • 1/2 teaspoon salt

Preparation

  • Preheat the oven to 350°F (175°C). Grease an 8x8 inch baking dish.
  • In a bowl, combine graham cracker crumbs and melted butter; press into the bottom of the prepared dish.
  • In another bowl, mix together brown sugar, granulated sugar, and flour.
  • Add in instant coffee granules, eggs, vanilla extract, and salt; stir until well combined.
  • Pour the coffee mixture over the crust.

Baking

  • Bake for 25–30 minutes or until the center is set.
  • Let cool before cutting into bars.

Notes

Serve at room temperature or slightly chilled with vanilla ice cream or whipped cream. Store in an airtight container at room temperature for up to 3 days or refrigerated for up to 1 week. Can be frozen for up to 2 months.
