Ingredients
  

For the Cookies

  • 1 box 15.25 oz chocolate cake mix
  • 0.5 cup canola oil
  • 2 large eggs

For the Mint Buttercream

  • 0.5 cup unsalted butter, softened
  • 2 cups powdered sugar
  • 1 teaspoon mint extract
  • 0.25 teaspoon salt
  • 2-4 tablespoons heavy cream Adjust for desired consistency
  • green food dye For color

For the Ganache

  • 0.33 cup heavy cream
  • 1 cup semi-sweet chocolate chips

Preparation

  • Turn the oven on and set it to 350°F (175°C).
  • Cover baking trays with parchment paper.
  • Combine eggs, oil, and cake mix in a bowl.
  • Place 2-tablespoon balls of dough onto the trays.
  • Pop them in the oven for 10–12 minutes.
  • Let them cool on the sheet briefly, then move to a rack.

Mint Frosting

  • Whip the butter until creamy.
  • Add powdered sugar, mint flavoring, a pinch of salt, and 2 tablespoons of cream.
  • Stir in green food coloring.
  • Add more cream if needed for a softer texture.
  • Spread the frosting over the cooled cookies.

Ganache

  • Heat 1/3 cup of cream and pour it over your chocolate chips.
  • Let it sit for a minute.
  • Whisk the cream and chocolate until smooth and shiny.
  • Allow the ganache to cool for 10–15 minutes.
  • Gently layer the ganache over the frosted cookies.
  • Give them time to set before enjoying.

Notes

These cookies are super simple thanks to cake mix—perfect for beginners or quick baking sessions. Freeze cookies (frosted or unfrosted) for up to 3 months. Just thaw and enjoy!
