Ingredients
  

  • 6 large eggs
  • 1 cup cottage cheese full-fat or low-fat, as preferred
  • 1/2 cup shredded cheddar or mozzarella cheese
  • 1/4 cup diced green onions
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper

Optional Add-ins:

  • Cooked bacon or sausage crumbled
  • Diced vegetables like bell peppers spinach, or mushrooms
  • A dash of red chili flakes for a spicy kick

Instructions
 

Preheat the Oven:

  • Preheat your oven to 375°F (190°C). Grease an 8x8-inch baking dish with non-stick cooking spray or butter.

Prepare the Egg Mixture:

  • In a mixing bowl, whisk the eggs until the yolks and whites are fully combined. Stir in the cottage cheese, shredded cheddar or mozzarella, green onions, salt, and pepper.

Add Optional Ingredients:

  • If desired, fold in cooked bacon, sausage, or diced vegetables. Mix gently to distribute evenly.

Pour and Bake:

  • Pour the mixture into the prepared baking dish, spreading it evenly. Bake in the preheated oven for 30-35 minutes, or until the top is golden and the center is set. Test with a toothpick; if it comes out clean, it’s ready.

Cool and Serve:

  • Let the dish cool for 5-10 minutes before slicing into portions. Serve warm and enjoy!
