Preparation

  • Marinate the pork chops in buttermilk for at least 1 hour or overnight.
  • In a shallow dish, mix flour and salt together.

Cooking

  • Heat oil in a large skillet over medium heat.
  • Remove the pork chops from the buttermilk and dip them in the flour mixture, coating both sides.
  • Fry the pork chops in hot oil until golden brown, about 4-5 minutes per side. Remove and keep warm.
  • In the same skillet, cook bacon until crispy. Remove and crumble.
  • Whisk in chicken broth and heavy cream, scraping up brown bits, and bring to a simmer.
  • Stir in crumbled bacon and green onions. Season with pepper.
  • Serve the fried pork chops topped with bacon gravy.

Notes

For extra flavor, add your favorite herbs or spices to the flour mixture. Ensure oil is hot enough before frying the pork chops to achieve a crispy crust. Don’t overcrowd the skillet; cook in batches if necessary. Store leftovers in an airtight container in the fridge for up to 3 days.
