Ingredients
  

Main Ingredients

  • 1 lb Ground beef Use lean ground beef for a healthier option.
  • 2 cans Canned beans (like kidney beans or black beans)
  • 4 cups Potatoes (diced)
  • 2 cups Cheddar cheese (shredded) Feel free to use different types of cheese.
  • 1 medium Onion (chopped)
  • 3 cloves Garlic (minced)
  • 1 tsp Salt
  • 1 tsp Pepper
  • 1 cup Diced tomatoes (optional) For added flavor.
  • 1 cup Corn (optional) Can add sweetness.

Instructions
 

Preparation

  • Brown the ground beef in a skillet over medium heat. Drain any excess fat.
  • In the slow cooker, combine the browned beef with the beans, diced potatoes, shredded cheese, chopped onion, minced garlic, salt, and pepper.
  • If desired, add the diced tomatoes and corn for extra flavor.
  • Stir well to mix all ingredients.

Cooking

  • Cover the slow cooker and set to low for 6-8 hours or high for 3-4 hours until the potatoes are tender.

Serving

  • Serve hot, optionally garnished with extra cheese or fresh herbs.

Notes

Let leftovers cool before transferring to an airtight container. Will keep in the fridge for 3-4 days or can be frozen for up to 3 months. Reheat thoroughly when ready to serve.
