  • 4 pieces chicken breasts Pat dry before seasoning.
  • 1 cup fresh cranberries Use fresh for best flavor, frozen works if thawed.
  • 1/2 cup orange juice Freshly squeezed is best.
  • 1/4 cup brown sugar Can be substituted with honey.
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • 1 piece Zest of 1 orange Adds freshness to the dish.

Instructions
 

Preparation

  • Preheat your oven to 375°F (190°C).
  • In a bowl, mix together the cranberries, orange juice, brown sugar, olive oil, garlic powder, and orange zest.
  • Season the chicken breasts with salt and pepper, then place them in a baking dish.
  • Pour the cranberry-orange mixture over the chicken.

Cooking

  • Bake in the preheated oven for 25-30 minutes, or until the chicken is cooked through and the juices run clear.
  • Serve warm, garnished with additional cranberries and orange slices if desired.

Notes

For a saucier finish, spoon pan juices over the chicken before serving. Refrigerate leftovers in an airtight container for up to 3-4 days or freeze for up to 2 months.
