Instructions
 

Preparation

  • In a medium bowl, combine the graham cracker crumbs, sugar, and melted butter. Stir until the mixture is evenly moistened.
  • Press the mixture firmly into the bottom and up the sides of a 9-inch pie pan.
  • Place the crust in the refrigerator for at least 30 minutes to firm up.

Melt the Chocolate

  • Melt the semi-sweet chocolate chips using a double boiler or microwave in 20-second intervals, stirring until smooth. Set aside to cool slightly.

Make the Chocolate Cream Cheese Filling

  • In a large mixing bowl, beat the softened cream cheese until smooth and creamy.
  • Add the powdered sugar and vanilla extract, mixing until fully combined. Gradually mix in the melted chocolate.

Whip the Cream

  • In a chilled bowl, beat the heavy whipping cream on high speed until stiff peaks form.
  • Gently fold the whipped cream into the chocolate mixture.

Notes

For a firmer crust, bake at 350°F (175°C) for 8–10 minutes, then cool completely before filling. Store covered in the refrigerator for up to 4 days or freeze without toppings for up to 1 month.
