  • 1 butternut squash, peeled and cubed
  • 1 onion, chopped
  • 4 cloves garlic, roasted
  • 4 cups vegetable broth

  • 1 teaspoon ground cumin
  • 1 teaspoon ground ginger
  • 1 teaspoon ground cinnamon

Preparation

  • In a large pot, heat some olive oil over medium heat.
  • Add the chopped onion and cook until it’s soft and translucent, about 5 minutes.
  • Toss in the cubed butternut squash and cook for another 5 minutes.

Cooking

  • Stir in the roasted garlic, cumin, ginger, and cinnamon, mixing everything together nicely.
  • Pour in the vegetable broth and bring the mixture to a boil.
  • Once boiling, reduce the heat and let it simmer for 20-25 minutes until the squash is tender.
  • Using an immersion blender or a regular blender, puree the soup until it's smooth and creamy.
  • Season with salt and pepper to taste.

Serving

  • Serve warm and garnish with fresh herbs if desired.

Notes

Roast your garlic for added sweetness, blend well for a creamier texture, and taste as you go for the best flavor. This soup can be customized with other vegetables or spices to match your preferences.
