  • 4 cups diced potatoes Russet or Yukon Gold potatoes work well.
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 pound sausage (Italian or your choice), sliced Use any type of sausage you prefer.
  • 4 cups chicken broth Can substitute with vegetable broth for a lighter taste.
  • 1 cup heavy cream For a lighter option, use half-and-half.

Seasoning and Garnish

  • Salt and pepper to taste
  • Fresh herbs (e.g., thyme or parsley) for garnish

Preparation

  • In a large pot, cook the sausage over medium heat until browned. Remove and set aside.
  • In the same pot, add diced onions and garlic; sauté until translucent.
  • Add diced potatoes and chicken broth. Bring to a boil, then reduce heat and simmer until potatoes are tender.
  • Stir in the sausage and heavy cream. Season with salt and pepper.
  • Cook for an additional 5 minutes, then serve hot with fresh herbs sprinkled on top.

Notes

For extra flavor, consider adding carrots or celery. Adjust seasoning according to taste; adding a pinch of red pepper flakes will give it a nice kick. Can be made vegetarian with plant-based sausage or legumes.
