Ingredients
  

  • 1 medium head of cauliflower cut into florets
  • 1 tablespoon olive oil or vegan butter
  • 1 medium onion chopped
  • 3 cloves garlic minced
  • 1 medium potato peeled and diced (adds creaminess)
  • 4 cups vegetable broth
  • 1 cup unsweetened plant-based milk almond, oat, or soy
  • 1/2 teaspoon salt adjust to taste
  • 1/4 teaspoon black pepper
  • Pinch of nutmeg or smoked paprika optional
  • Fresh parsley or chives for garnish
  • Lemon juice for brightness, optional

Instructions
 

Sauté Aromatics

  • In a large pot, heat the olive oil over medium heat. Add chopped onion and sauté for 4–5 minutes until translucent. Stir in the garlic and cook for another 1 minute until fragrant.

Add Cauliflower and Potato

  • Add the cauliflower florets and diced potato to the pot. Stir to coat the veggies in the aromatic oil.

Add Broth and Simmer

  • Pour in the vegetable broth. Bring to a boil, then reduce heat and simmer for about 15–18 minutes, or until the cauliflower and potatoes are very tender.

Blend Until Creamy

  • Use an immersion blender to blend the soup right in the pot until smooth and creamy. Alternatively, transfer the soup in batches to a blender. Be careful with hot liquids—vent the lid slightly.

Stir in Plant-Based Milk

  • Return the blended soup to the pot (if using a countertop blender) and stir in the plant-based milk. Add salt, pepper, and a pinch of nutmeg or paprika if desired. Simmer for 2–3 more minutes to heat through.

Taste and Serve

  • Adjust seasoning to taste. Add a squeeze of lemon juice if you like a bit of brightness. Ladle into bowls and garnish with fresh parsley, chives, or a drizzle of olive oil.
