For the Salmon Bites:
- 1 lb fresh salmon skin removed & cut into 1-inch cubes
- ½ cup all-purpose flour
- 2 eggs beaten
- 1 cup panko breadcrumbs
- ½ teaspoon salt
- ½ teaspoon black pepper
- ½ teaspoon garlic powder
- ½ teaspoon paprika
- Vegetable oil for frying
For the Bang Bang Sauce:
- ½ cup mayonnaise
- 2 tablespoons sweet chili sauce
- 1 tablespoon sriracha adjust for spice level
- 1 teaspoon honey
- 1 teaspoon lime juice optional
Prepare the Salmon:
Pat the salmon cubes dry with a paper towel and season with salt, pepper, garlic powder, and paprika.
Set Up Breading Station:
Place flour in one bowl, beaten eggs in another, and panko breadcrumbs in a third.
Dredge each salmon cube in flour, dip into the beaten egg, and then coat with panko breadcrumbs.
Fry the Salmon:
Heat about 1 inch of vegetable oil in a skillet to 350°F (175°C).
Fry the salmon bites in batches for 2-3 minutes per side, until golden brown and crispy.
Transfer to a plate lined with paper towels to drain excess oil.
Make the Bang Bang Sauce:
In a bowl, whisk together mayonnaise, sweet chili sauce, sriracha, honey, and lime juice.
Coat & Serve:
Toss the crispy salmon bites in the Bang Bang sauce or drizzle it on top.
Garnish with chopped green onions, sesame seeds, or cilantro.
