Ingredients
  

For the Fries

  • 2 medium medium zucchinis, cut into fries
  • 1/2 cup all-purpose flour
  • 2 large large eggs, beaten
  • 1 cup panko breadcrumbs
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon garlic powder
  • 1/2 teaspoon paprika
  • to taste Salt and black pepper
  • Olive oil spray

Preparation

  • Preheat the oven to 425°F (220°C).
  • Cut the zucchinis into fries and set aside.
  • In one bowl, place the flour. In another bowl, beat the eggs. In a third bowl, mix together panko breadcrumbs, Parmesan cheese, garlic powder, paprika, salt, and pepper.

Breading

  • Dip each zucchini fry first in the flour, then in the beaten eggs, and finally in the breadcrumb mixture. Make sure they are well coated.

Baking

  • Place the coated fries on a baking sheet lined with parchment paper. Spray lightly with olive oil.
  • Bake for about 20-25 minutes, or until they are golden brown and crispy.

  • Serve hot and enjoy!

Notes

These zucchini fries can be served with a variety of dips such as ketchup, marinara sauce, or ranch dressing. For extra crunch, double bread the fries by dipping them in egg and breadcrumbs twice. Use fresh ingredients for the best flavor.
