Ingredients
  

Vegetable Preparation

  • 2 medium zucchinis, cut into fries

Coating Mixture

  • 1/2 cup all-purpose flour
  • 2 large eggs, beaten
  • 1 cup panko breadcrumbs
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon garlic powder
  • 1/2 teaspoon paprika
  • Salt and black pepper, to taste
  • Olive oil spray

Preparation

  • Preheat the oven to 425°F (220°C).
  • Cut the zucchinis into fries and set aside.
  • In one bowl, place the flour. In another bowl, beat the eggs. In a third bowl, mix together the panko breadcrumbs, Parmesan cheese, garlic powder, paprika, salt, and pepper.

Coating

  • Dip each zucchini fry first in the flour, then in the beaten eggs, and finally in the breadcrumb mixture, making sure they are well coated.

Baking

  • Place the coated fries on a baking sheet lined with parchment paper and spray lightly with olive oil.
  • Bake for about 20-25 minutes, or until they are golden brown and crispy.
  • Serve hot and enjoy!

Notes

For extra crunch, double bread the fries. Store leftovers in an airtight container for up to 3 days and reheat in the oven to retain crispiness.
