Ingredients
  

Main Ingredients

  • 1 pound chicken breasts Use boneless, skinless for best results.
  • 2 cups rice Use long-grain or basmati rice.
  • 4 cups chicken broth
  • 1 cup shredded cheese Add at the end of cooking.
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 cup frozen peas and carrots
  • to taste salt and pepper
  • 1 teaspoon paprika

Instructions
 

Preparation

  • Begin by placing the chicken breasts in the bottom of your crock pot.
  • Layer the chopped onion, garlic, and frozen peas and carrots on top of the chicken.
  • Pour the chicken broth over everything in the pot.
  • Add the rice, and sprinkle in salt, pepper, and paprika. Gently stir to mix everything together.

Cooking

  • Put the lid on and cook it on low for 6-8 hours or on high for 3-4 hours.
  • When it’s done cooking, stir in the shredded cheese until it’s melted and mixed through before serving.

Notes

Make sure to use rice that is suitable for slow cooking. Feel free to switch up the vegetables: corn, green beans, or bell peppers can work well. For extra flavor, marinate the chicken beforehand.
