  • 2 cups shredded cheddar cheese
  • 1 cup sour cream Can be substituted with Greek yogurt for a lighter option.
  • 1 can cream of mushroom soup Can substitute with cream of chicken soup or a homemade creamy sauce.
  • 1 onion, diced
  • to taste Salt and pepper
  • 1/2 cup milk

Preparation

  • Mix the diced potatoes, sliced kielbasa, diced onion, sour cream, cream of mushroom soup, milk, salt, and pepper in a large bowl until well combined.
  • Layer this mixture into your slow cooker.
  • Sprinkle the shredded cheddar cheese on top.
  • Cover and cook on low for 6-8 hours or on high for 4 hours, until the potatoes become tender.
  • Stir before serving and enjoy!

Notes

Store leftovers in an airtight container in the fridge for 3-4 days. Reheat in the microwave or stovetop until heated through. Feel free to add extra vegetables, like bell peppers or corn, to customize the dish. For a spicy kick, add diced jalapeƱos or red pepper flakes.
