  • 1 lb ground beef Browned and drained
  • 4 cups potatoes, diced Cut into even pieces
  • 1 cup carrots, chopped
  • 1 cup celery, chopped
  • 1 onion diced
  • 3 cloves garlic, minced
  • 4 cups beef broth
  • 1 cup cream or milk Use whole milk or half-and-half for a richer soup
  • 1 cup shredded cheese
  • Salt and pepper to taste
  • Optional: Herbs like thyme or parsley

Preparation

  • In a skillet, brown the ground beef over medium heat. Drain excess grease and transfer to a crockpot.
  • Add the diced potatoes, carrots, celery, onion, and garlic to the crockpot.
  • Pour in the beef broth, and season with salt, pepper, and any optional herbs.

Cooking

  • Cover and cook on low for 6–8 hours or on high for 3–4 hours, until vegetables are tender.
  • About 30 minutes before serving, stir in the cream or milk and shredded cheese. Allow to melt and combine, then serve hot.

Notes

Let the soup cool to room temperature, then store in an airtight container in the fridge for up to 3–4 days. For longer storage, freeze in portions for up to 2 months; thaw overnight in the fridge before reheating. Brown the beef well for more flavor and taste for seasoning at the end.
