Ingredients
  

For the Coconut Filling

  • 160 g desiccated coconut
  • 100 g full-fat coconut milk (solid part only) *Chill a can of full-fat coconut milk overnight and scoop out the solid cream that rises to the top.
  • 3 tbsp full-fat coconut milk (liquid part) *Note: Use the liquid from the chilled coconut milk.
  • 4 tbsp maple syrup
  • ¼ tsp salt

For Coating

  • 150 g dark chocolate, melted Choose high-quality dark chocolate (at least 70% cocoa solids) for rich flavor.

Preparation

  • Add the desiccated coconut, solid coconut milk, liquid coconut milk, maple syrup, and salt to a food processor. Blend until the mixture becomes relatively smooth and sticks together.

Shaping

  • Use clean hands to form the coconut mixture into 10–12 bar shapes. Place them on a baking sheet or cutting board lined with parchment paper.

Freezing

  • Freeze the shaped bars for 1–2 hours — this helps them firm up so the chocolate coating sets properly.

Coating

  • Melt the dark chocolate in a heat-safe bowl. Dip each frozen coconut bar into the melted chocolate to coat fully, then place back onto the parchment paper.

Setting

  • Refrigerate the bars until the chocolate hardens. Once fully set, they’re ready to enjoy!

Notes

Serve chilled or at room temperature. Store bars in an airtight container in the fridge for up to 5 days. These bars also freeze well for future enjoyment.
