Preparation

  • Begin by melting your 8 oz of chopped dark chocolate using a double boiler or the microwave in 20-second bursts.
  • Let the melted chocolate sit on the counter for a few minutes to cool slightly.
  • In a clean, chilled bowl, whip the 1 cup of heavy cream until stiff peaks form.
  • In a separate bowl, beat together the 4 eggs, 1/4 cup sugar, 1 tsp vanilla extract, and a pinch of salt until fluffy and pale.

Assembly

  • Gently fold the slightly cooled melted chocolate into the egg mixture gradually.
  • Carefully incorporate the whipped cream into the chocolate-egg mixture using a rubber spatula.

Chilling

  • Pour the mousse mixture into a greased cake pan and refrigerate for at least 2 hours.

Serving

  • Once set, run a thin knife around the edge of the pan to release it and slice with a warm knife.
  • Serve chilled and enjoy.

Notes
