Dry Ingredients

  • 1 3/4 cups all-purpose flour
  • 2 cups granulated sugar
  • 3/4 cup unsweetened cocoa powder
  • 1 1/2 teaspoons baking powder
  • 1 1/2 teaspoons baking soda
  • 1 teaspoon salt

Wet Ingredients

  • 2 large eggs
  • 1 cup whole milk
  • 1/2 cup vegetable oil
  • 2 teaspoons vanilla extract
  • 1 cup boiling water

Preparation

  • Preheat the oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  • In a large bowl, whisk together flour, sugar, cocoa powder, baking powder, baking soda, and salt.
  • Add the eggs, milk, oil, and vanilla. Beat on medium speed for 2 minutes until smooth.
  • Carefully stir in the boiling water. The batter will be thin — that’s normal.
  • Pour the batter evenly into the prepared pans.

Baking

  • Bake for 30 to 35 minutes, until a toothpick in the center comes out clean.
  • Cool in the pans for 10 minutes, then turn the cakes out onto wire racks to cool completely.

Serving

  • Frost with your favorite chocolate buttercream or a simple whipped cream frosting.
  • For a showstopping dessert, layer and fill with chocolate ganache or whipped mascarpone.
  • Serve warm with a scoop of vanilla ice cream.

Notes

Measure flour correctly by spooning it into the cup and leveling off. Use hot water to bloom the cocoa for deeper flavor. Don’t overmix after adding boiling water.
