Equipment

  • Stand mixer with dough hook (or mixing bowls and strong arms!)
  • Loaf pan (9x5-inch)
  • Rolling Pin
  • Sharp knife or kitchen scissors
  • Pastry brush
  • Measuring Cups and Spoons
  • Small bowls for cinnamon-sugar mix and glaze
  • Wire cooling rack

Ingredients

For the Dough:

  • 3 cups all-purpose flour plus more for dusting
  • 2 1/4 tsp active dry yeast 1 packet
  • 1/4 cup granulated sugar
  • 1 tsp salt
  • 1 cup warm water 110°F/43°C
  • 2 tbsp vegetable oil
  • 1 egg

For the Cinnamon Sugar Coating:

  • 1/2 cup granulated sugar
  • 1 1/2 tbsp ground cinnamon
  • 4 tbsp unsalted butter melted

For the Glaze:

  • 1 cup powdered sugar
  • 2 –3 tbsp milk
  • 1/2 tsp vanilla extract

Instructions

Make the Dough

  • In the bowl of a stand mixer (or large bowl), dissolve yeast in warm water with a pinch of sugar. Let it sit for 5–10 minutes until foamy.
  • Add flour, sugar, salt, vegetable oil, and the egg. Mix on medium speed using the dough hook for about 5–7 minutes, until the dough is soft and elastic. If kneading by hand, knead on a floured surface for 8–10 minutes.
  • Form the dough into a ball, place it in a greased bowl, and cover. Let it rise in a warm place for 1–2 hours, or until doubled in size.

Shape the Bread

  • Once the dough has risen, punch it down and roll it into a rectangle (about 10x12 inches). Brush the entire surface with melted butter.
  • In a small bowl, combine cinnamon and sugar, then sprinkle generously over the buttered dough.
  • Cut the dough into 4 even strips. Stack them on top of each other and then cut that stack into 4 more even pieces. Place the stacked pieces vertically in a greased loaf pan so they look like accordion folds.

Second Rise

  • Cover the loaf loosely and let it rise for another 30–40 minutes, until puffy and nearly doubled.

Bake

  • Preheat oven to 350°F (175°C). Bake the bread for 30–35 minutes or until golden brown and cooked through. If it browns too quickly, cover loosely with foil halfway through.
  • Let the bread cool in the pan for 10 minutes, then transfer to a wire rack.

Make the Glaze

  • Whisk together powdered sugar, milk, and vanilla extract until smooth. Drizzle the glaze over warm bread before serving.

Notes

Storage Tips

  • Store in an airtight container at room temperature for up to 3 days.
  • Reheat slices in the microwave for 10–15 seconds for a gooey fresh-out-of-the-oven taste.
  • Freeze unglazed bread for up to 2 months. Thaw and glaze before serving.
