Ingredients
  

Potato Balls

  • 300 g potatoes (peeled and cut into smaller chunks)
  • ½ tsp salt
  • 150 g potato starch (or corn starch)
  • 100-300 g water (based on moisture level) Add gradually while kneading.

Spicy Dipping Sauce

  • 2 tbsp chili powder
  • 1 tbsp sesame seeds
  • 2 tbsp soy sauce
  • 2 tbsp vinegar
  • 1 tbsp oyster sauce
  • 1 tsp sugar
  • 1 tsp chopped cilantro
  • 2 tbsp vegetable oil (hot, for greasing)

Instructions
 

Preparation of Potato Balls

  • Peel the potatoes and cut them into chunks. Steam or boil them until fork-tender.
  • Smash the cooked potatoes until smooth using a fork or potato masher.
  • Mix in the salt and potato starch thoroughly.
  • Gradually add water to the dough while kneading continuously until it becomes smooth and pliable.
  • Shape the dough into golf ball-sized balls, yielding about 22 to 24 potato balls.

Steaming

  • Lightly grease your steamer with oil and arrange the potato balls inside, leaving space between them. Steam over high heat for 15 minutes.

Preparing the Dipping Sauce

  • In a small bowl, mix together chili powder, sesame seeds, soy sauce, vinegar, oyster sauce, sugar, and cilantro.
  • Heat the vegetable oil until hot, then pour it over the mixture and stir well.

Serving

  • Once cooked, dip the potato balls into the spicy sauce while they’re warm and enjoy!

Notes

Use a non-stick steamer or oil it well to prevent sticking. Feel free to add finely chopped vegetables or cheese into the mixture for variations.
