Ingredients
  

For the Oreo Crust

  • 32 pieces Oreo cookies
  • ½ cup butter, melted

For the Chocolate Filling

  • 8.1 oz dark chocolate, chopped
  • 5.2 oz heavy cream For melting with chocolate
  • 1 teaspoon vanilla extract
  • ½ teaspoon kosher salt
  • 1 teaspoon espresso powder Enhances chocolate flavor

For Whipping the Filling

  • 1 ½ cups heavy cream, cold
  • ¼ cup cocoa powder Sifted
  • 2 tablespoons granulated sugar
  • 3 tablespoons instant pudding mix (chocolate or vanilla)

For the Whipped Cream Topping

  • 1 cup heavy cream
  • 1 teaspoon vanilla extract
  • 2 tablespoons powdered sugar

Instructions
 

Make the Crust

  • Pulse the Oreo cookies in a food processor until fine crumbs form. If needed, place cookies in a zip-top bag and crush with a cup.
  • Mix the crumbs with melted butter until evenly coated.
  • Press firmly into the bottom and sides of a greased 9-inch pie pan.
  • Freeze for at least 20 minutes to set.

Prepare the Chocolate Base

  • In a heatproof bowl, combine dark chocolate, heavy cream, vanilla, salt, and espresso powder.
  • Melt gently in the microwave or over a double boiler, stirring until smooth.
  • Let cool completely.

Whip the Filling

  • In a large bowl, add cold heavy cream, instant pudding mix, cocoa powder (sifted), and sugar.
  • Beat with an electric mixer until stiff peaks form.

Combine

  • Add the cooled chocolate mixture to the whipped mixture.
  • Mix briefly with the electric mixer, then gently fold with a spatula until smooth and fully combined.

Assemble

  • Pour the chocolate filling into the chilled Oreo crust and smooth the top.
  • Refrigerate for at least 5 hours, or overnight, until fully set.

Top & Serve

  • Whip the topping ingredients until soft peaks form.
  • Spread or pipe over the pie before serving. Garnish with chocolate shavings if desired.

Notes

For a more intense chocolate flavor, consider using extra dark chocolate for the filling.
