  • 2 carrots chopped
  • 2 stalks celery, chopped

Preparation

  • Start by seasoning the beef chuck roast with salt and pepper.
  • In your slow cooker, mix together the sliced onion, minced garlic, beef broth, Worcestershire sauce, and soy sauce.
  • Place the beef roast in the slow cooker, ensuring it’s fully immersed in the flavorful liquid.
  • Add the chopped carrots and celery.

Cooking

  • Cover the slow cooker and let it cook on low for 8-10 hours until the beef is fork-tender.
  • For a thicker sauce, mix the cornstarch and water in a bowl until smooth, then stir it into the slow cooker during the last 30 minutes of cooking.
  • Toss in the frozen peas and let them warm through before serving.

Serving

  • Serve hot and garnish with fresh parsley.

Notes

This dish is great served with crusty bread or over mashed potatoes. For extra flavor, let the beef marinate with spices before cooking. You can adjust the vegetables, adding mushrooms or bell peppers for variety. For a bit of heat, add red pepper flakes.
