Main Ingredients

  • 2 pounds chicken (thighs or breasts) Use whatever is on sale
  • 1 can black beans Substitutes like kidney or pinto beans are fine
  • 1 cup salsa
  • 1 cup broth (chicken or vegetable)
  • 1 tablespoon cumin
  • 1 teaspoon chili powder
  • 1 cup diced tomatoes with green chilies Optional for extra flavor

Preparation

  • Add all ingredients into the slow cooker.
  • Stir to combine.
  • Cover and cook on low for 8 hours or high for 4 hours.

Serving

  • Serve hot, optionally with cheese and fresh herbs.

Notes

Let leftovers cool before storing. They can be refrigerated for up to 4 days or frozen in single servings. Chili tastes better after sitting for a day.
