Ingredients

Main Ingredients:

  • 2 burger buns brioche, whole wheat, or regular
  • 2 eggs
  • 4 slices of halloumi cheese about ½ inch thick
  • 2 lettuce leaves
  • 1 tomato sliced
  • ½ red onion thinly sliced
  • 1 tablespoon olive oil or butter for frying

Sauces & Seasoning:

  • 2 tablespoons mayonnaise or Greek yogurt for a healthier option
  • 1 teaspoon mustard or hot sauce optional
  • Salt & black pepper to taste

Optional Toppings:

  • ½ avocado sliced
  • Caramelized onions
  • Jalapeños or chili flakes for spice

Instructions

Step 1: Prepare the Halloumi

  • Heat a non-stick frying pan over medium heat.
  • Add a little olive oil and place the halloumi slices in the pan.
  • Cook for 2-3 minutes on each side until golden brown and crispy.
  • Remove from the pan and set aside.

Step 2: Cook the Egg

  • In the same pan, crack the eggs and cook over medium heat.
  • Fry for 3-4 minutes until the whites are set but the yolk is still runny (or cook longer for a firm yolk).
  • Season with a pinch of salt and black pepper.

Step 3: Toast the Buns

  • Lightly toast the burger buns in a toaster or on a dry pan for 1-2 minutes until golden.

Step 4: Assemble the Burger

  • Spread mayonnaise (or your preferred sauce) on the bottom half of each bun.
  • Layer with lettuce, tomato slices, and grilled halloumi.
  • Gently place the cooked egg on top.
  • Add any additional toppings like avocado or caramelized onions.
  • Cover with the top bun and press gently.
