  • 3 pieces Eggs The primary aerating agent.

  • 1 tsp Baking Powder For that essential lift.

Instructions
 

Preparation and Melting

  • Preheat your oven to 180°C. Grease and flour your pan thoroughly.
  • Use a double boiler (bain-marie) to melt the chocolate and butter. Stir until the mixture is glossy and smooth.
  • Let this mixture cool slightly before adding it to the eggs.

Building the Aeration

  • In a large bowl, beat the eggs with the sugar until pale and foamy.
  • Gently fold the melted chocolate mixture into the foamy eggs.
  • Stir in the vanilla, cocoa, and baking powder.
  • Add the sifted flour in three parts, alternating with the milk. Start and end with the flour.

The Bake and Decorate

  • Pour the batter into the pan and bake for 30-40 minutes.
  • A toothpick should come out clean. Let the cake cool completely on a wire rack.
  • Slice the cake horizontally. Fill the center with melted chocolate, top with whipped cream and drizzle extra chocolate. Finish with nuts or fruit.

Notes

Chocolate cakes are sensitive to over-baking; check your cake at the 30-minute mark to prevent dryness. If possible, add ½ cup of heavy cream to the batter for guaranteed moisture. Use high-quality unsalted butter for the best results.
