Ingredients
For the brownie base
- 2 cups dark chocolate chips
- 1 cup unsalted butter At room temperature
- 1.5 cups granulated sugar
- 4 large eggs At room temperature
- 2 teaspoons vanilla extract
- 1 cup all-purpose flour
- 0.5 cup cocoa powder
- 0.5 teaspoon salt
For the topping
- 1 cup heavy cream
- 0.5 cup powdered sugar
Instructions
Preparation
- Preheat your oven to 350°F and line a 9×13 inch pan with parchment paper, leaving an overhang for easy removal.
- Melt the chocolate chips and butter together in a double boiler or microwave (in 30-second intervals), stirring until smooth and glossy.
- Whisk the sugar into the chocolate mixture until combined, then add the eggs one at a time, beating well after each addition. Stir in the vanilla extract.
- In a separate bowl, sift together the flour, cocoa powder, and salt. Gradually fold this mixture into the chocolate batter until just combined.
- Pour the batter into the prepared pan and spread evenly.
Baking
- Bake for 25–30 minutes, or until a toothpick inserted into the center comes out with a few moist crumbs.
- Allow the brownie base to cool completely.
Topping
- Once cooled, whip the heavy cream with powdered sugar until stiff peaks form, then spread evenly over the brownies.
- Cover tightly and freeze for at least 4 hours or overnight.
- Before slicing, let the bars sit at room temperature for about 5 minutes. Wipe the knife clean between cuts for neat slices.
Notes
Take eggs and butter out to room temperature before mixing. Don’t overmix the batter to keep the brownies tender. Use parchment paper for easy removal. Freeze overnight for the best texture. Warm your knife under hot water and clean it between cuts for clean slices. Store tightly wrapped in the freezer for up to 3 months.
