Ingredients
  

Taco Shells

  • 6–8 small small flour tortillas Use slightly smaller tortillas for mini tacos.

Cheesecake Filling

  • 1 cup Fruity Pebbles cereal Reserve some for topping.
  • 1/2 cup granulated sugar For sweetening the Fruity Pebbles.
  • 1 package (8 oz) cream cheese, softened Make sure it is fully softened for a smooth mixture.
  • 1/2 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 cup whipped cream For lightness in the filling.

Preparation

  • Preheat the oven to 350°F (175°C).
  • Lightly fry the flour tortillas until they are flexible.
  • Shape them into taco shapes and secure them with toothpicks.
  • In a mixing bowl, combine cream cheese, powdered sugar, and vanilla extract until smooth.
  • Fold in the whipped cream to create a fluffy filling.
  • Fill the taco shells with the cheesecake mixture.
  • In a separate bowl, combine Fruity Pebbles and granulated sugar, and sprinkle on top of each filled taco.
  • Chill for 30 minutes before serving.

Notes

For added crunch, sprinkle extra Fruity Pebbles on top just before serving. Store leftovers in an airtight container in the refrigerator and enjoy within a day or two for best texture.
