  • 4 pieces fresh cod fillets (about 6 oz each) Use fresh for the best flavor and texture.
  • 1/2 cup unsalted butter 1 stick.
  • 4 cloves fresh garlic, minced Adjust the amount based on your garlic preference.
  • 2 tbsp lemon juice, freshly squeezed
  • 2 tbsp fresh parsley, chopped For garnish.
  • Salt and pepper to taste

Preparation

  • Preheat your oven to 400°F (200°C). Spray a baking dish with nonstick cooking spray.
  • In a small saucepan over medium heat, melt the butter. Add minced garlic and sauté until fragrant, about 1 minute. Stir in lemon juice and remove from heat.
  • Place the cod fillets in the greased baking dish and pour the garlic butter mixture over them.
  • Season with salt and pepper to taste. Bake for 12-15 minutes until the fish flakes easily with a fork.
  • Garnish with chopped parsley before serving.

Notes

Garlic Butter Baked Cod pairs well with rice, steamed vegetables, fresh salad, or crusty bread. For a fresh touch, add a wedge of lemon on the side. Store leftovers in an airtight container for up to 2 days and reheat gently.
