Ingredients
  

For the Chicken Marinade

  • 1 lb chicken breast, diced
  • 1/4 cup soy sauce Use tamari for a gluten-free option
  • 4 cloves garlic, minced
  • 1 tablespoon honey (optional) Increase for a sweeter taste
  • to taste Salt and pepper

For Cooking

  • 2 cups mixed vegetables (bell peppers, broccoli, snap peas) Fresh or frozen both work well
  • 1 cup cashews Can substitute with other nuts
  • 2 tablespoons olive oil

For Serving

  • as needed Cooked rice or noodles For serving

Instructions
 

Marination

  • In a bowl, combine the chicken with soy sauce, minced garlic, honey, salt, and pepper. Marinate for at least 30 minutes.

Cooking

  • Heat the olive oil in a skillet over medium heat. Add the marinated chicken and cook until browned and fully cooked, about 5-7 minutes.
  • Add the mixed vegetables and stir-fry for another 3-4 minutes until the vegetables are tender but still crisp.
  • Stir in the cashews and cook for an additional minute.

Serving

  • Serve over cooked rice or noodles, garnished with extra cashews, green onions, or sesame seeds if desired.

Notes

Store leftovers in an airtight container in the refrigerator for up to 3 days. For longer storage, freeze for up to a month. Reheat thoroughly before serving.
