  • 1 cup gingerbread cookie crumbs
  • 1/2 cup cream cheese, softened Use room temperature for easier mixing.
  • 1 cup white chocolate chips Melted for coating.
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/4 cup powdered sugar For rolling the truffles.

Preparation

  • In a bowl, mix the gingerbread cookie crumbs with cream cheese, vanilla extract, ground cinnamon, and ground nutmeg until well combined.
  • Refrigerate the mixture for about 30 minutes to firm up.
  • Once firm, scoop out small portions and roll them into balls.
  • Melt the white chocolate chips in a microwave-safe bowl, stirring until smooth.
  • Dip each truffle into the melted white chocolate and let excess chocolate drip off.
  • Roll the truffles in powdered sugar to coat.
  • Place on a baking sheet lined with parchment paper and refrigerate until set.

Notes

Store in an airtight container in the refrigerator for up to 1 week or freeze for up to 2 months. Thaw in the fridge before serving.
