Ingredients
  

For the Cake

  • 1 cup all-purpose flour
  • ½ cup cocoa powder Use good-quality cocoa powder for deep chocolate flavor.
  • 1 teaspoon baking powder
  • ¼ teaspoon salt
  • 4 large eggs
  • 1 cup granulated sugar
  • ¼ cup vegetable oil
  • 1 teaspoon vanilla extract

For the Filling and Topping

  • ½ cup caramel sauce
  • ½ cup pecan halves, chopped
  • ½ cup heavy cream
  • 1 cup semi-sweet chocolate chips
  • extra units pecan halves, for garnish

Instructions
 

Preparation

  • Preheat the oven to 350°F (175°C). Line a baking sheet with parchment paper and lightly grease it.
  • In a bowl, sift together the flour, cocoa powder, baking powder, and salt. Set aside.
  • In a large mixing bowl, beat the eggs and sugar until light and fluffy. Add the vegetable oil and vanilla extract, mixing until fully incorporated.
  • Gradually add the dry ingredients to the wet ingredients, mixing just until combined. Pour the batter onto the prepared baking sheet and spread it evenly.
  • Bake for 12–15 minutes, or until the cake is set.

Rolling the Cake

  • While the cake is still warm, carefully roll it up with the parchment paper and allow it to cool completely to prevent cracking later.

Adding the Filling

  • Once cooled, gently unroll the cake and spread the caramel sauce evenly over the surface. Sprinkle the chopped pecans on top.
  • Roll the cake back up without the parchment paper and place it seam-side down.

Making the Ganache

  • Heat the heavy cream in a small saucepan until it just begins to simmer. Pour it over the chocolate chips and let sit for 2 minutes, then stir until smooth and glossy.
  • Pour the chocolate ganache over the cake roll and garnish with extra pecan halves.

Serving

  • Allow the cake to set before slicing. Serve and enjoy every rich, gooey bite.

Notes

Roll the cake while warm to avoid cracks. Let the ganache cool slightly before pouring for a smooth finish. Chill briefly before slicing for clean, beautiful cuts.
