  • 1 head Romaine lettuce Chopped into bite-sized pieces
  • 1 cup Cherry tomatoes Halved
  • 1 large Cucumber Chopped
  • 1 small Red onion Chopped
  • 1 cup Feta cheese Crumble
  • 1/2 cup Olives (Kalamata or green) Pitted and sliced

Vinaigrette Ingredients

  • 1/4 cup Olive oil
  • 2 tablespoons Red wine vinegar Can substitute with white wine vinegar
  • 1 teaspoon Dried oregano
  • 1/2 teaspoon Salt
  • 1/4 teaspoon Pepper

Topping

  • 1 cup Pita chips For serving

Preparation

  • Chop the romaine lettuce, cherry tomatoes, cucumber, and red onion into bite-sized pieces.
  • In a large bowl, combine the lettuce, tomatoes, cucumber, red onion, feta cheese, and olives.

Making Vinaigrette

  • In a small bowl, whisk together olive oil, red wine vinegar, dried oregano, salt, and pepper to make the vinaigrette.

Assembly

  • Pour the vinaigrette over the salad and toss to coat evenly.
  • Serve the salad topped with pita chips for extra crunch.

Notes

Use fresh, ripe vegetables for the best flavor. Add bell peppers or radishes for color. For extra protein, add grilled chicken or chickpeas. Make the vinaigrette in advance.
