Ingredients
  

For the filling

  • 1 lb ground beef
  • 1 packet taco seasoning or homemade blend
  • 1 cup cooked white rice
  • 1/2 cup sour cream
  • 1/2 cup nacho cheese sauce
  • 1/4 cup chipotle sauce
  • 1 cup shredded cheddar cheese
  • 1 cup shredded mozzarella
  • 4 large flour tortillas
  • as needed Butter or oil for grilling

Instructions
 

Preparation

  • Brown the ground beef in a skillet over medium heat for 8-10 minutes. Drain any excess grease.
  • Add the taco seasoning and 1/4 cup of water to the beef, then let it simmer for 5 minutes.
  • Heat the tortillas on a dry skillet or in the microwave to make them more flexible.

Assembly

  • Lay a tortilla flat and start layering: add rice, seasoned beef, nacho cheese, chipotle sauce, and sour cream.
  • Top it off with shredded cheddar and mozzarella.

Cooking

  • Heat a clean skillet, sprinkle 2 tablespoons of shredded cheese in it, and place the burrito seam-side down.
  • Cook until the cheese melts and forms a golden, crispy crust, about 3-4 minutes per side.

Notes

Serve warm, cut in half to reveal the layers. Pair with sour cream, salsa, or guacamole. For leftovers, wrap and store in the refrigerator for up to 3 days.
