Ingredients
  

Chicken and Marinade

  • 4 pieces Chicken breasts Boneless and skinless preferred
  • 1/4 cup Lemon juice Freshly squeezed for best flavor
  • 2 tablespoons Olive oil
  • 3 cloves Garlic Minced
  • 1 teaspoon Salt Adjust to taste
  • 1/2 teaspoon Black pepper Freshly ground preferred

Vegetables

  • Broccoli Fresh or frozen
  • Additional veggies of your choice Bell peppers, zucchini, or corn recommended

Preparation

  • In a bowl, whisk together lemon juice, olive oil, minced garlic, salt, and black pepper to create the marinade.
  • Place chicken breasts in a zip-top bag or a bowl, pour the marinade over, and let it marinate for at least 30 minutes.

Grilling

  • Preheat the grill to medium-high heat.
  • Remove chicken from the marinade and place on the grill. Grill for about 6-7 minutes on each side or until cooked through.
  • In the last few minutes of grilling, add broccoli and any other veggies to the grill.
  • Once done, remove the chicken and vegetables from the grill and serve immediately.

Notes

Grilled Lemon Chicken is best served hot off the grill with grilled vegetables or a fresh salad. Optionally serve with rice or quinoa. Squeeze some extra lemon juice on top before serving for added freshness.
