Ingredients
  

Chicken Marinade

  • 4 pieces chicken breasts Boneless and skinless preferred.
  • 1/4 cup fresh lime juice About 2-3 limes.
  • 1/4 cup olive oil Extra virgin recommended.
  • 1/4 cup chopped fresh cilantro Pack tightly when measuring.
  • 2 cloves garlic, minced Fresh garlic for best flavor.
  • Salt and pepper to taste Adjust according to preference.

Guacamole

  • 2 pieces ripe avocados Should be soft but not overripe.
  • 1 piece lime, juiced Use fresh lime juice.
  • 1 small onion, chopped Red onion adds sweetness.
  • 1 piece tomato, diced Roma tomatoes work well.
  • Salt to taste Adjust according to preference.

Preparation

  • In a bowl, mix lime juice, olive oil, chopped cilantro, minced garlic, salt, and pepper to create the marinade.
  • Place chicken breasts in a resealable bag or bowl and pour the marinade over the chicken. Marinate for at least 30 minutes.
  • To make the guacamole, mash avocado in a bowl and mix in lime juice, chopped onion, diced tomato, and salt.

Cooking

  • Preheat the grill over medium-high heat.
  • Grill the chicken for 6-7 minutes on each side or until fully cooked.

Notes

Serve with a fresh salad, rice, or tortilla chips. A lime wedge adds extra flavor.
