Ingredients
  

For the Marinade

  • 2 tablespoons olive oil
  • 1 lemon juiced Juice should be freshly squeezed.
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • Salt and pepper to taste

For the Chicken

  • 4 pieces boneless chicken breasts Ensure they are all of similar size for even cooking.

For Garnish

  • Fresh herbs (like parsley or basil) Use for garnishing before serving.

Instructions
 

Marination

  • In a bowl, whisk together olive oil, lemon juice, minced garlic, dried oregano, salt, and pepper.
  • Place the chicken breasts in a shallow dish and pour the marinade over them. Flip the chicken to coat it well.
  • Cover the dish and let it marinate in the refrigerator for at least 30 minutes, or up to 2 hours for more flavor.

Cooking

  • Preheat your grill or oven to medium-high heat.
  • Remove the chicken from the marinade and discard the remaining marinade.
  • Grill the chicken for about 6-7 minutes on each side or until fully cooked. If baking, place the chicken on a baking sheet and cook for 20-25 minutes, until no longer pink in the center.
  • Allow the chicken to rest for a few minutes before slicing.

Serving

  • Garnish with fresh herbs before serving.

Notes

For extra flavor, try marinating the chicken overnight. Make sure your grill or oven is preheated before cooking to ensure even cooking. Use a meat thermometer to check that the chicken has reached an internal temperature of 165°F for safety. You can also swap out the seasoning to create different flavors or use other proteins like fish or tofu for a variation.
