Ingredients
  

Shortbread Base

  • 1 1/2 cups Almond Flour Finely ground for smoother texture.
  • 3 tbsp Butter (melted)
  • 1 1/2 tbsp Maple Syrup
  • 1/2 tsp Vanilla Extract
  • 1/4 tsp Salt

Caramel Filling

  • 1 cup Creamy Peanut Butter Can substitute with almond butter or sun butter.
  • 1/3 cup Maple Syrup May use honey or agave syrup as alternatives.
  • 1 tsp Vanilla Extract
  • 1/4 cup Almond Flour

Chocolate Coating

  • 1 cup Chocolate Chips Use dark chocolate for a richer flavor and healthier option.
  • 1 1/2 tbsp Coconut Oil

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C) and line an 8x8 inch baking pan with parchment paper.
  • In a large bowl, mix almond flour, melted butter, maple syrup, vanilla extract, and salt until it forms a dough.
  • Press the mixture firmly into the bottom of the prepared baking pan and bake for 10-12 minutes until golden brown.
  • Let the shortbread cool completely.

Making the Caramel Filling

  • In a separate bowl, mix together peanut butter, maple syrup, vanilla extract, and almond flour until smooth.
  • Spread the caramel mixture evenly over the cooled shortbread layer and freeze for at least 1 hour.

Chocolate Coating

  • Melt chocolate chips and coconut oil together until smooth.

Assembly

  • Remove the pan from the freezer and lift the block out using the parchment paper.
  • Cut into 16 bars and dip each bar into the melted chocolate, ensuring full coating.
  • Place bars on a parchment-lined tray and drizzle with remaining melted chocolate, then sprinkle with flaky sea salt.
  • Return to the freezer for about 10 minutes to let the chocolate harden.

Notes

Store leftovers in an airtight container in the fridge for up to a week, or freeze them for longer storage.
