Main Ingredients

  • 2 pounds beef chuck, cut into 1-inch cubes Use good quality beef for the best flavor.
  • 4 cups beef broth Ensure it's gluten-free if necessary.
  • 4 medium potatoes, peeled and chopped
  • 3 carrots, sliced
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 2 tablespoons olive oil

Seasonings

  • 2 tablespoons tomato paste
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • Salt and pepper to taste

Cooking Instructions

  • In a large pot, heat the olive oil over medium heat. Add the beef cubes and brown them on all sides.
  • Add the chopped onion and minced garlic. Cook until the onion is soft.
  • Stir in the tomato paste along with the dried thyme, rosemary, salt, and pepper.
  • Pour in the beef broth, and then add the chopped potatoes and sliced carrots. Bring everything to a boil.
  • Once boiling, reduce the heat to low, cover, and let it simmer for 6-8 hours, or until the beef becomes tender.
  • Serve hot and enjoy the warmth of your delicious stew!

Notes

Beef stew is best served warm. Serve in bowls with a sprinkle of fresh herbs for color. Store leftovers in an airtight container in the fridge for up to 4 days or freeze for up to 3 months. Reheat on the stove or microwave.
