- 8 oz 225g high-quality dark chocolate (70% cocoa)
- 1/2 cup 115g unsalted butter
- 1 cup 200g granulated sugar
- 4 large eggs
- 1 tsp vanilla extract optional
- 1/4 tsp sea salt optional
Melt the Chocolate and Butter:
Mix in the Sugar and Eggs:
Once the chocolate mixture has cooled slightly, whisk in the sugar. Then, add the eggs, one at a time, whisking well after each addition. If you're using vanilla extract or salt, add them now. Mix until the batter is smooth and fully combined.
Cool and Serve:
Let the cake cool in the pan for about 10 minutes before running a knife around the edges to release it. Carefully invert the cake onto a plate, remove the parchment paper, and let it cool completely. You can serve it plain or top it with whipped cream, fresh berries, or a dusting of cocoa powder.
Tips for Success:
- Don’t Overbake: The cake should be soft in the center. Overbaking will make it dry and lose its signature fudgy texture.
- Use High-Quality Chocolate: The better the chocolate, the better the cake. Aim for at least 70% cocoa.
- Serve with Toppings: Whipped cream, fresh berries, or a dusting of powdered sugar make excellent toppings for this cake.
