Ingredients
  

  • 8 oz 225g high-quality dark chocolate (70% cocoa)
  • 1/2 cup 115g unsalted butter
  • 1 cup 200g granulated sugar
  • 4 large eggs
  • 1 tsp vanilla extract optional
  • 1/4 tsp sea salt optional

Instructions
 

Prepare the Cake Pan:

  • Preheat your oven to 350°F (175°C). Grease a 9-inch round cake pan with butter and line the bottom with parchment paper. This will ensure the cake comes out easily after baking.

Melt the Chocolate and Butter:

  • Place the dark chocolate and butter in a heatproof bowl. Melt them together using a double boiler (place the bowl over a pot of simmering water) or by microwaving in short bursts. Stir occasionally until the mixture is completely smooth and glossy.

Mix in the Sugar and Eggs:

  • Once the chocolate mixture has cooled slightly, whisk in the sugar. Then, add the eggs, one at a time, whisking well after each addition. If you're using vanilla extract or salt, add them now. Mix until the batter is smooth and fully combined.

Bake the Cake:

  • Pour the batter into the prepared cake pan and smooth the top. Bake for 20-25 minutes, or until the center is set but still slightly soft. The cake will firm up as it cools.

Cool and Serve:

  • Let the cake cool in the pan for about 10 minutes before running a knife around the edges to release it. Carefully invert the cake onto a plate, remove the parchment paper, and let it cool completely. You can serve it plain or top it with whipped cream, fresh berries, or a dusting of cocoa powder.

Notes

Tips for Success:

  • Don’t Overbake: The cake should be soft in the center. Overbaking will make it dry and lose its signature fudgy texture.
  • Use High-Quality Chocolate: The better the chocolate, the better the cake. Aim for at least 70% cocoa.
  • Serve with Toppings: Whipped cream, fresh berries, or a dusting of powdered sugar make excellent toppings for this cake.
