Main ingredients

  • 4 pieces chicken breasts Choose boneless and skinless for ease.
  • 1 cup heavy cream For a rich sauce.
  • 2 tablespoons olive oil For cooking the chicken.
  • 3 cloves garlic Minced for flavor.
  • 1 can diced tomatoes With herbs for added taste.
  • 1 tablespoon Italian herbs Dried or fresh.
  • 1/4 cup parmesan cheese Optional for garnish.

Preparation

  • Heat olive oil in a large skillet over medium heat.
  • Season chicken breasts with salt and pepper, then add to skillet.
  • Cook chicken for 6-7 minutes on each side until golden brown.
  • Remove chicken and set aside.

Making the sauce

  • In the same skillet, add garlic and cook until fragrant.
  • Add heavy cream, diced tomatoes, and Italian herbs. Stir and bring to a simmer.
  • Return chicken to the skillet and simmer in the sauce for about 10 minutes, or until chicken is cooked through.
  • Serve with additional parmesan cheese if desired.

Notes

Leftovers taste even better the next day. Serve over brown rice or steamed broccoli for extra protein.
